Not a huge seafood guy, although I live on the gulf, but I tried Leopard coral grouper in Egypt years ago...epic (made me shed a tear).

There is a great meat eater episode with kimi swimmy ( Kimi Werner). She is a superstar.  I think its off the Bahamas not sure, they catch and cook Hog Fish amongst other species. Incredible episode w

Best overall is Salmon. I like it pan fried, smoked, raw, and any other way you can serve it.

Toro (raw tuna belly)

Dover Sole

Branzino, cooked mediteranean syle

Smoked Whitefish, like you get in a Jewish deli.

Whitefish and lox on a bagel are my favorite combo. Screw the cream cheese.

I can never decide between them, so I usually put lox on one side and white fish on the other.

I do use cream cheese too though. And a tomato slice and onion, and capers if available. I need the cream cheese to keep the capers from rolling off when I eat it.

I wonder this hasn’t been mentioned sooner, one of the finest fish out there imho.

While not ecologically 'PC' – Common/Dover sole (pan fried). In my childhood used to be sold 30 penny apiece (plaice was 20) straight from the trawler.

Turbot (thick fillet from a larger fish, sauteed)

European eel (smoked, rested 3-5 days) – the most delicious fat on earth

European cisco (fresh from the smoke)

Smelt (in whole floured in rye and fried / pan fried with bacon)

Five already, still, one cannot do a list w/o wild salmon, whichever you get fresh/non-frozen (very lightly cold-smoked, or gravlax - just having one in prep as we speak).

Hogfish are fun to spear, they are very dumb and delicious.

In no particular order.

Flounder

Wild King Salmon

Cod 

Artic Char

Sword Fish

Oysters, (Wellfleet's of course)

I do eat loads of local soft and hard shell clams. I have a soft spot for fried clams  and soft shell crabs.

Arctic Char are superb. I fished the Tree River in northern Canada years ago. We were not allowed to keep any but the natives can. Our guides caught and cooked a few one night.

1. Trout - freshly caught in the mountains, pan fried with butter, salt and pepper

2.  Coho Salmon - cedar plank

3. Halibut 

4. Ling cod - fish and chips

5. Walleye - pan fried in beer batter.

My go-to Jewish deli has the best whitefish, it is a sin not to order it. But I also am just crazy for lox, so I also get both on occasion. Cream cheese is a must for capers, agreed.

Pike are great fresh out lakes or rivers. Tough to get those Y bones completely out of the fillet.

Take your VERY sharp fillet knife and slice along the top of the Y about 3/4 thru the fillet. Repeat for the bottom of the Y, running the blade just on top of the rib bones. Pull the piece out and towards the belly (bottom.) The bones that remain usually cook out. One of the Sioux guides on Lake of the Woods taught me that! If your Northern is under 20 lbs, either release the fish or feel ashamed for the rest of the season!!! 😂

Ha West Australian Dhu fish are the same. They swim right up two and then turn side on as  if to say look how big I am. Then it's over.
