Arctic Char are superb. I fished the Tree River in northern Canada years ago. We were not allowed to keep any but the natives can. Our guides caught and cooked a few one night. 1

My go-to Jewish deli has the best whitefish, it is a sin not to order it. But I also am just crazy for lox, so I also get both on occasion. Cream cheese is a must for capers, agreed. 1

They swim right up two and then turn side on as if to say look how big I am. Then it's over.
