It's mainly, I smoked a bunch of chicken and I'm pairing it with steamed broccoli, or asparagus 1

Sir Diggamus Posted February 20, 2023 Posted February 20, 2023 Beyond my daily morning shake I have been really enjoying my daily lunches that are healthy and easy to make. I start with a simple recipe for quinoa (1 cup quinoa, 2 cups water/broth), and that nets me 3 to 4 servings for lunch prep. In the mornings I add a mix of veggies, dried fruits, a little cheese, and leftover chicken or fish and take it to the office for a healthy, quick lunch. I add a little dressing that also gives it a kick. Pictured below is a batch in which I added diced celery, capers, chopped spinach, diced cucumber, Kalamata olives, and goat cheese. The simple dressing recipe is as follows and generally nets two servings that I divide up into two small containers 1/4 cup olive oil 2 tablespoons red wine vinegar 1 tablespoon lemon juice 1 teaspoon Dijon mustard 1/2 teaspoon oregano 1/4 teaspoon granulated garlic 1/4 teaspoon granulated onion Sent from my iPhone using Tapatalk

Sautéed some scallops tonight, and was reminded that they are in fact my favorite meat. Delicious! Also cooked some less healthy Parmesan mushroom risotto. Great meal tonight. 2
JohnS Posted February 27, 2023 Posted February 27, 2023 I'm doing okay. I've lost about 3 kgs or around 7 lbs. I've lost weight faster in the past but I feel that I have better energy levels throughout the day just by avoiding processed foods. 1
