It was a struggle to get enough energy to clean all the shellfish since we got in around 7am from New Year’s Eve party. So already I was a couple hours behind schedule and dragging. Cleaning the lobsters, king crab legs, clams, mussels and the shells on the shrimp to make my fish stock. I was ready for nap but had to power on to start the rest. Added cod, scallops and uncooked shrimp to the main pot letting that cook. Finally got to eat around 7:30. 13
Kitchen Posted January 8, 2023 Posted January 8, 2023 Well I haven't had it yet, but I just finished roasting about 15 pounds of beef and veal bones, sautéed the mirepoix in the left over marrow, added in the herbs and now starting the long haul 30 hour simmer. Saturday night here now, so the Demi Glace should be finished Monday morning. Now, what to cook Monday night? 2
