First course was locally caught prawn carpaccio, with beluga caviar and lime oil. Next course was poached free range egg, with truffles and smoked foie gras in a cream sauce. Then, red mullet with artichokes in a sweet potato pure. Next was veal tenderloin, idiazabal cheese, vegetables, and black truffle shavings. And for dessert, something they call "coffee textures", which was a log of mascarpone, surrounded by carob crumbles that were supposed to look like coffee grounds, foamed milk, and finally coffee poured over the top. Eaten in this incredible setting for which the picture doesn't do justice. 27

It was lightly smoked with applewood under a bell jar. Washed it down with a Piper-Heidsieck Rare Millesime 2006. 4

Funny was just at Le Bilboquet in Palm Beach yesterday for lunch, I always get the cajun chicken and am still always somehow surprised how good it is. That ribeye looks like it would be worth deviating for!

That ribeye looks like it would be worth deviating for! It was one of the specials. It was amazing, but I really should have shared it with my wife. After eating those two large pieces of Foie Gras there was no way I was eating that whole steak. I asked the waiter if he thought it was big enough for two people and he said no. 😂 That sauce was amazing too. That’s what they do best in my opinion.
