Popular Post El Hoze Posted January 22 Popular Post Posted January 22 Duck meatloaf. On top are pickled beets and below is like a thick broth with oniony sauerkraut. Freezing cold in NYC, this dish is insanely good. The best thing I have eaten in a long time. 12

Popular Post Pmo13 Posted February 6 Popular Post Posted February 6 Three day dry-brined prime rib I whipped up for the family the other day. Made an Au Jus with some extra veal demi glace I had laying around, as well as a horseradish cream sauce. I’ll probably cook 1-2 of these a year, and they always hit the spot. 16

Popular Post shortsmokes Posted February 9 Popular Post Posted February 9 Braised goose legs. Goose legs are my second favorite thing about waterfowl hunting next to my dog. You have to cook them a while to make them tender but it is well worth the effort. I braised these in red wine and broth with veggies and potatoes. They are divine. 9

Popular Post SigmundChurchill Posted Thursday at 09:24 PM Popular Post Posted Thursday at 09:24 PM My son flew down to Miami to meet us for his birthday so we took him to his favorite restaurant, Carbone. He said it was not quite as good as the original one, in NYC, but I didn't notice a difference. As usual, we ordered their signature dishes, rigatoni with spicy vodka sauce, veal parmigiana, and Ceasar salad where they make the dressing at the table for you. 10
