I visited the 5 Grande Dames of the area - Galatoires, Antoines, Arnauds, Commanders Palace and Brennan's. The world has changed a lot in the past few years and I wanted to see them all while they were still around. I may never eat again...The best dish I had, though, was from Cochon Butcher. Le Pig Mac- house made sausage in a recreated McDonald's classic. Don't know how I managed to stuff it down between Brennan's and Commanders but I did. I can't stop thinking about it... 9

Popular Post westg Posted September 8 Popular Post Posted September 8 It does not look much and their is not much to it. I absolutely nailed this dish. Glacier 51 tooth fish and sesame seaweed salad. Expensive at a $150 a KG in Aus. Worth it indeed. A big hit with friends. I can honestly say food, when it is this good has an euphoric effect. Constantly drizzled with gee and a sprinking of salt. Gorgeous. Total preparation and cook time...10 mins tops. 14

Sourdough crust made with organic heritage flour fermented for 48 hours with honey instead of sugar, all organic tomato sauce with maple syrup instead of sugar, grass fed buffalo mozzarella, grass fed raw provolone, grass fed raw truffle gouda, raw parmeggiano reggiano, raw pecorino Romano, grass fed pasture raised beef and pork uncured pepperoni. Zero flop, crunchy, light, slightly chewy and very flavorful! 11

Sat at the kitchen bar and chef Javier just brought out what he liked. Standouts were tuna in passionfruit sauce, pipies in a lemon wine garlic sauce and a T-bone to die for. 13 1
