My wife asked me what I wanted for birthday and I asked for a brunch. She made all of this by herself. One of the greatest meals I ever had.

May not be the prettiest of pasta dishes, but I genuinely don’t understand how I never knew this existed. Essentially a combination of all the famous Roman pasta recipes (Carbonara, Amatriciana, Alla Gricia and Cacio e Pepe) it checks quite literally every box. Silky smooth (thanks to the eggs) spicy tomato sauce loaded with Pecorino, Guanciale and sausage. Highly recommend taking a swing at this one as it’s actually not very difficult to turn out. 

If I could pass on two essential tips though, it would be to temper your egg/cheese mixture with the boiling pasta water, as it helps avoid any lumps! And second would be to use a bottle of tomato passata as opposed to crushing your own tomatoes or using tomato sauce for the same reason as above.

That sounds wonderful.

Yes, along with Smoked ham and bacon. Very tasty. Other pizza was pepperoni and bacon.

My wife was born and raised in Chicago. Lou Malnati's is her favorite.

Worked Chicago area a couple of times and went to Giordano's which was pretty tasty. Fan of the deep dish style!
