Popular Post Pmo13 Posted June 28 Popular Post Posted June 28 Pasta alla Zozzona. May not be the prettiest of pasta dishes, but I genuinely don’t understand how I never knew this existed. Essentially a combination of all the famous Roman pasta recipes (Carbonara, Amatriciana, Alla Gricia and Cacio e Pepe) it checks quite literally every box. Silky smooth (thanks to the eggs) spicy tomato sauce loaded with Pecorino, Guanciale and sausage. Highly recommend taking a swing at this one as it’s actually not very difficult to turn out. If I could pass on two essential tips though, it would be to temper your egg/cheese mixture with the boiling pasta water, as it helps avoid any lumps! And second would be to use a bottle of tomato passata as opposed to crushing your own tomatoes or using tomato sauce for the same reason as above. 10 1

Popular Post Blazer Posted July 14 Popular Post Posted July 14 Definitely last night's dinner. Seared scallops on a bed of lemon orzo with haricot verts topped with a lemon beurre blanc sauce. My wife, who usually just grunts at me when I ask how it tastes proactively said this is delicious! 8 1
