I am pairing it with a Darjeeling second flush tea from Vahdam Teas. Mild-medium opening with sweet raisins, figs, and leather. 1/3 . Woody notes, cinnamon and dried sweet berry fruit, leather and Herbs on the finish. Still pretty mild, nice creamy Woody notes on retro. 2/3 This improves a long the way. Lovely malty notes, rye-bread comes into play with the sweet dried fruit still there. Construction is perfect Body increases to just under medium. It is still a quite subtle experience, maybe due to the 10 years of age. Bread, Graham crackers, raisins, herbs (oregano?) wood and gentle leather comes and go. Soft cedar on the retro which is very pleasant. Flavors concentrate arount the bready aspect, oats, rye, crackers dominate. It burns fast. Thorougly enjoyable 3/3. A good amount of transitions and an increase in intensity from 1/3 – 2/3 and towards the close. I am getting a lot of complexity through the retro here that does not come on the palate for me. Black olives. I havent tried that before. All the flavors above come together and intertwine here in the last third. Very good Indeed. If i didnt retro this i would miss half the flavors or more. Overall it went from 88-92 , i would tend to land on a 91 point score. 13
