Great video! Love watching masters of their craft do it the old fashioned way. Perreca's looks amazing.  Reminds of the famous Sobrino de Botín in Madrid that claims to have kept their ovens burning since they opened in 1725. Perreca's will catch up to them in time I'm sure!
