It was a massive and gorgeous looking 1:1 scaled cigar vitola poster with excellent paper quality indeed. Anyway, went to visit the in-laws and was tasked to make a turkey. This post is mostly just a PSA to say that when you spatchcock the bird, not only does it cook in 85 minutes (as opposed to 4 hours) but you get really great results even in an oven you aren’t familiar with. So, short moral, pull the backbone out, salt for 48 hours, throw some herbs under the skin (including the thigh and drumstick), roast and pull when breast is 147 degrees. I think the reason that people associate white meat with being dry is because they pull at 165. I was happy. I am grateful for health, family, and friends. oh I have no cigar to speak of because I am a California wimp and the idea of a cigar outside at 35 degrees gives me the willies. 13 Link to comment Share on other sites More sharing options...

I continued to tear out the floor and tub in the bathroom and rebuilt the wall to include a niche (non load bearing wall) and rock wool insulation. FYI the small spaces where the rock wool doesn’t completely fit were filled including above the niche. This is a work in progress pic. Tasted (and wore) lot of joint compound dust after rebuilding several areas that had to be removed for plumbing and tile work. Best pic I have of some of the work.
