Popular Post Habana Mike
Biketoberfest 2021. 125K extra bikers in the area for the weekend. A couple hundred found their way into town to hang out. Finn's is popular with the HD crowd. We're about 3 miles north of town. Had a fair few ride by on the A1A route Daytona to St. Augustine. And when I say a fair few, I should qualify that as in the thousands....
Popular Post BrightonCorgi
6 lb lamb leg cooked yesterday. Lamb was raised a few miles from my house. It's en vogue around here to have a very small farm with animals raised like rock stars. There are mansions with part of yard converted to farming and livestock.

Popular Post Bill Hayes
Maybe it was the fact, as the most locked down city, gaining some freedoms to meet up with mates, but the JL#2 never fails to deliver for me. As I sat huddled from the wind in the public park in the middle of Caulfield Race course and ate hillbilly ban mei (pork sausage, pork crackle snacks, coleslaw and bbq sauce in a roll) after my JL#2 and Adroit Theory Imperial Stout, I realised why I love this cigar so much. Like the one a week earlier, it was rustic yet not bitter. You know you're smoking a cigar which is what I prefer. It delivered toasted notes with a hint of leather and dried fruits. And the unmistakeable Cuban twang that I find mostly in old school Partagas, some BBF, early Behike and Siglo 6 and JL.

I wanted to keep it simple so I used 3 oz tabasco peppers, one large red habanero, 3 red jalapenos and 2 orange mini bells for 5 oz total. No mangos, pineapple, garlic, onions or anything like that. The next time I'm going to add a couple smoked habaneros and jalapenos to try something different. I wish I would have had more hot peppers to make more, but this is the very end of the season for peppers here in Kansas City. Next year I'll make multiple bottles in the summer to share with friends and family.

Peppers are hotter here than in southern regions due to the cold. We had a hard frost so only some plants are still kicking in our pepper garden. Most are just going to die on the vine. I don't have the time to pick them. We end up drying 90% of our peppers and grinding them to a powder for cooking. Use in Salami, etc... The hot sauce was the wife's idea and she is leading the charge. We used some fermented peppers (blend of hot and mild red peppers) on a pork chop last night that was marvelous. We coughing cooking it, but it did not taste as hot as we thought it would
