Baked egg in avocado - Great for brunch!

1. Ripe Avocado

2. Medium Free range egg

3. Chopped Chives

4. Sourdough bread

5. Black pepper and Favourite hot sauce

Cut the avocado in half and remove the stone.  Use a knife to gently separate the avocado from the skin but leave it in place. Scoop out a small amount of the flesh from the center and then crack an egg into the center.  Bake for 15-20 minutes at 200C.  Take out of oven and then remove from skin and place on a slice of sourdough and add chopped chives, pepper and a drop of hot sauce.

Buffalo Chicken Dip

  1. Two pounds chicken breast
  2. One pound shredded cheddar cheese
  3. One 16oz bottle blue cheese salad dressing 
  4. Two 8oz packs of cream cheese
  5. Bottle of Frank's RedHot (or if you live a zone barren of Frank's, the best Buffalo hot sauce you can find - unless you can order Frank's, then do so)

Directions:

Boil the chicken in a stockpot until completely cooked.  Shred the chicken with two forks or a proper shredder (the wife got me these ninja claw looking shredders that work great, I feel like The Wolverine when I use them).  I typically pour the bottle of hot sauce over the chicken at this point, to make sure it gets adequately seasoned.

Add cream cheese to a slow cooker (crock pot) and put on High heat.  Wait for the cream cheese to melt and then add in all of the other ingredients except the chicken.  Mix all ingredients until well blended.  Add in the chicken and remaining hot sauce.  Cook for at least one hour on High heat and can be left on Low or Warm heat indefinitely if having a football party or other event.

Serve with tortilla chips.

I cannot overstress the criticality of the Frank's RedHot, if you cannot get it in your area let me know and I will mail you a bottle.  I have had this made with Tabasco Green and it was inedible.

Sliced sourdough bread--the real kind with crust that'll cut your gums

Sliced avocado--ripe but not over; you want a touch of firmness.

butter

Kosher Salt & Pepper

Toast bread, butter the toast. Add avo slices and press down slightly (you don't want guac for this). Finish with S&P-don't be bashful here.

Dinner Tonight:

Sausage & Peppers

1 lb Turkey Sausage Sliced

1 Red Onion Sliced thinly sliced

1 Each Red, Green & Yellow Bell Pepper sliced

Spices: Garlic powder, Salt, basil, oregano, pepper

Tomato sauce

Add sausage to a dutch oven and brown, add onion and sweat till translucent. Add spices and tomato sauce and simmer for 20 minutes. If you like your peppers soft throw them in with the sauce, if you like your peppers a little more firm wait 10-minutes. Serve alone, over white rice or in a crusty Italian roll.

 

Pair with Masi Campofiorin red wine. For you wine lovers this is a killer red that mimics the Amarone style, but at a very reasonable price point.

 

Dessert:

1 Small Danon Light Vanilla Greek Yogurt

1/2 Cup of fresh cherries pitted and halved

Salted Pistachios

Directions- Spread yogurt evenly over a foil lined 8x10 pan. Place & press cherries and pistachios into the yogurt and freeze for 2-3 hours. Pull from the freezer crack on the counter like peanut brittle and serve immediately. A low carb, low calorie, refreshing sweet and salty treat.

Fried potato cakes. A farmers breakfast delight

Sieglinde Potatoes or whatever type you like

Dried chive and green onion flowers( we make our own yum)

 Minced garlic

Rosemary 

 3 Eggs

 

Take a few potatoes shred them with a cheese shredder strain off the liquid, add an egg and other ingredients mix well ,make into a patty and fry in copious amounts of pasture fed pigs lard. Serve hot and sizzling. Cook other eggs separate or crack on top and let fry into cakes. 

Makes a nice side with sausage or bacon or steak.

This morning...

One red potato, diced and sprinkled with crushed Rosemary.

Handful of diced onion.

Four slices bacon, chopped.

Three eggs scrambled.

Fry bacon, remove from grease.  Fry potato and onion in grease until brown.  Add egg. 

 

Move to plate and inhale.

I am a big fan of simple, filling, snacks and meals that are satisfying.  Here are a couple of my faves (not necessarily in the order of preference!):

Smoked Salmon

Cream cheese

Capers 

Thin slices red onion  (optional)

Mini Twist pretzels 

Combine in ratios of your liking and chow down.

Bread, Peanut butter and Jelly.  Slather copious amounts of PB & J on bread and bask in the glory!

1 Part Gran Clasico

1 Part Sweet Vermouth 

1 Part Rye Whiskey 

Pour over ice and stir.  Repeat as often as possible.

Enjoy!

BLT w/Egg Sandwich:

Microwave two slices of bacon.  Break each slice in half

Toast two slices of wheat bread with mayonnaise spread liberally

Two or three thin tomato slices

Two fried eggs with yolk broken salted/peppered

Lettuce of your choice (I use iceberg)

Been trying to get back into shape recently, so I've been making these pancakes as a good start to the day since they're quick.

1/4 cup oats

1/4 cup cottage cheese

1/2 scoop of protein powder (I've been using vanilla since that's what I have on hand, but chocolate might work better)

1/2 cup egg whites

Optional: 1/2 of a banana (feels like its missing something without the banana)

Toss all ingredients into a blender and blend until it looks like batter. Cook like regular pancakes after that on a griddle or a pan if you don't have a griddle. 

Ends up being about 315 calories (4g fat, 31g carbs, 34g protein). I've been topping them with a little peanut butter too, which gives me an extra kick of energy to get going in the morning, though the other half of the banana would probably also be good.

24 oysters

175ml double cream.....   work it out yourself I think (6Fl OZ )

grated parmesan cheese

60g melted butter

ground black pepper

pre heat grill , put them on a baking tray or rack of the grill pan . spoon about 1and a half teaspoons  of cream over each oyster and season with black pepper . Sprinkle over the parmesan cheese  and drizzle with the melted butter  . Grill the oysters for around 90 seconds or until the cheese is golden brown .

 

serve immediately

perfect with any  decent champagne

Tri Tip

Cover Tri Tip with salt and pepper. Slowly grill meat till perfect while drinking beer.

From my experience a Tri Tip takes a little longer than 1200 seconds to cook properly.........unless you really like it tough and rare!

Grilled cheese and tomato

2 pieces sourdough bread

3 slices American cheese

2 slices tomato

butter

spread light butter on bread, add cheese tomato and heat on pan for 4 minutes. Flip every two minutes. And enjoy!

As a balance for the high fat snacks here's a favorite if mine.

 

1. 250g of zero fat Greek yoghurt 

2. 1tblsp of honey

3. A handful of walnuts

4. 2 fresh apricots

5. 1 fresh peach

 

Cut the fruit in bitesize pieces

Peel and break the walnuts

Put the yoghurt in a bowl, add fruit, nuts and honey, mix and enjoy.
