Popular Post Overproof Posted January 11, 2016 Popular Post Posted January 11, 2016 My butcher had a few racks of these, over an inch thick, beautifully marbled with fat and vac sealed so I though id give them a shot. Never done beef ribs before I made a texas style dry rub with cracked pepper, mustard, onion, garlic and chili powder plus a few teaspoons of sugar. Smoked it with a small chunk of hickory and some cherry wood. I couldn't believe how tender they turned out. Totally worth the 7 hrs. I must try a brisket next 5

My wife always goes for the beef ribs. They look delicious. I've always been a fan of pork ribs myself and never really even considered these but I'm with you!! so much more meat and flavor.
