paulF Posted January 24, 2015 Posted January 24, 2015 Hey everyone, Long story short, moved to my new house ,it has six Victorian plum trees around the garden... Gave away as much as i could, ate as much as i could and still ended up with an excess of fruits so had to make PROPER use of the fruit(No , making jam is not proper use...) Ended up looking around the net for some homemade Slivovitz recipes and below is the outcome. Only did the Vodka version for now and will be doing the Brandy one soon. Simple recipe was, 1 kilo of fruit(pierced with their stones left in ), 700ml of Vodka, a cup of brown sugar and a cinnamon stick. Most recipes asked for a piece of lime peel but i chose not to add that as some of the fruits were still a bit acidy... PS: Process is not that simple, as you need to piece the fruits, and sanitise jars... Next is a long wait of around 2-3 month in a dark place agitating the jar a few times every once in a while and then the fun part of tasting begins. Anyone tried this before?!

We tried to keep 3-5 different ones ready and had more in the back "marinating". For the most part they came out great and we made some really unique flavors and cocktails with them. Sounds like yours will taste good.
headstand Posted January 24, 2015 Posted January 24, 2015 Is it supposed to end up brown with floaty bits on top? Or does it have to be filtered at this point? A few months back I made a batch of Limoncello and Triple Sec that turned out well - actually the limoncello is off the charts. This summer I will try an Italian concoction called nocino: immature walnuts soaked in vodka. Turns out brown and vaguely tastes of Jäger Meister. As for plums, I ferment with added sugar then still it...

paulF Posted January 25, 2015 Author Posted January 25, 2015 Cheers guys, No tasting yet @bradbrennan, it should be hidden away for 2 month at least and then will taste. @Headstand, after you do the tasting and you are happy with the outcome, that's when you actually strain it with a coffee filter or whatever that works. Would have a been awesome to actually try and distill some ... future project project i guess! @Shlomo and Napa_smokes, haven't done any tasting yet but even during the mixing process, the smell of Vodka,brown sugar and cinnamon was really good and was mixing well with the scent of the pierced Plums ! I reckon the outcome will be pretty good but should have a good bite to it. Will update the post in a few weeks or after the first tasting
paulF Posted February 11, 2015 Author Posted February 11, 2015 A taste update guys, The batch done with Vodka is turning out pretty nice for my liking but is pretty hot and not for the faint hearted lol Aroma is great too (sweet plums, cinnamon and light vodka smell) The batch done with brandy seems a bit more dull flavour/aroma wise but definitely hot too. I'm thinking maybe its because it doesn't have the actual seeds in it but also it hasn't been sitting there as long as the Vodka batch has. So far so good although the Vodka batch is winning for now. Another taste update in a week or so! Cheers

The brandy is a little less hot but tastes really nice although you will feel blood rushing through your head after the first sip (no ice or anything with it) I had a piece of the plum that's been brewing in there for the past few month and that was absolutely beautiful, would go so well with deserts i think... The vodka batch is turning out to be an awesome drink. It's sweet and not as harsh as the brandy batch and smells of cinnamon and sort of liquorice... Both batches have a port like consistency and even smelled like Spiced rums at times due to brown sugar use(molasses ) and the cinnamon stick. Will be filtering and bottling soon and will post pics of final products. Cheers 1
Hypersomniac Posted April 15, 2015 Posted April 15, 2015 Very cool! I have only ever made limoncello and apple pie. Never heard of slivovitz before, but it sounds good.
cris77 Posted April 15, 2015 Posted April 15, 2015 I make it with apples or with raspberries...it's a nice way to enjoy vodka... Because most vodka that you would want to use is 40%, you are better off using something like Polmos Spirytus Rectified Spirit 95% as a base and dilute it according to taste.
