I've seen them sold locally in the markets but have no idea how to "shuck" them and those spines look menacing. Is there a way to do it without injury?

Prime 70 day aged Rib Steak on the bone:

When it was done cooking I put it on a very warm plate and let it rest for 15 minutes tented under foil.

Sorry, I was so excited to eat it that I forgot to take any more pics.
