saw the american version of this somewhere so made it with an aussie twist.

the seppo version is take a cup of bourbon and simmer down to about 2/3rds. then mix it in with about two cups of good ketchup and a cup of maple syrup.

the aussie version - swap rum for bourbon, use good old heinz tomato sauce and golden syrup instead of maple.

so easy and it is a cracker.

now i just need a name for it.

Nice, there are some really good, easy sauces, that can be made from standard sauces with minor extras. I do a BBQ sauce with ketchup, hot dog mustard, packet BBQ sauce, red wine vinegar, Worcestershire, then various bits like cumin, hot sauce, paprika... I tend to mess around with the quantities... Heat the lot in a pan to a slow simmer for half an hour stirring regularly... Nearly always turns out awesome :)

i was very tempted to add a few fresh chilis but i thought i should do a basic one first up. but will definitely fiddle around in future.

"Snags"? Huh? What the hell is a "snag"?

Admittedly Ken, I'm a little concerned about this sauce. Sounds like it'd go great with maybe a hotdog with some caramelized onion or perhaps a home burger.. but it sounds like it'd be a pretty powerful flavor killer.. I'm guessing just dont use it on anything pricey or worth enjoying on its own? :P

My personal favorite sauce--pink dressing. Mix equal parts ketchup and mayo.

You can also add a bit of sweet or dill relish to this. Can be called Russian Dressing or Thousand Island. Can also make lots of variants w/ various spices/ingredients (capers, anchovies, paprika, horseradish, etc.). I like the basic version w/ relish on a roast beef or corned beef sandwich on rye w/ cole slaw on it.
