I am not Guy, but I do believe that muddling is traditional. When I have one made with Bacardi, it leaves me an after taste that I don't enjoy. But that must be me Here is a great site on Havana Club, click on the Mojito and see how it's made at the Bodeguito de Medio in La Habana. Tim, of course I muddle my mint , but I leave the stems because that's where you get the most concentration of mint. Hope you all enjoy the link ......................... I have never really read or seen that in any recipes, and certain places definitely overdid it with that (a little goes a long way for bitters). But, it was interesting and different.

So, apparently a mojito doesn't require premium white rum?!!?! Sorry for the sidetrack....

I don't know - I like the mojitos better with the lime and white rum, rather than golden rum and lemon bar mix. And I'm sure that both Bacardi and Havana Club could historically quote each other to death, each claiming to be the original inventors, etc., etc. The way I've always seen it in bartending guides is with lime and white rum. But, to each their own, though. Hey, I even sorta enjoyed it with the Agnostura bitters - but, I guess when you're in Cuba, and the atmosphere and the musical rhythms and the cigars and alcohol are running freely, any drink is a good drink!

I like mine slightly bitter... now back to Guy's original intent of the post...Great review... Guy, I remember you running into this jar but can't remember where you picked it up at...
