In need of a deli style Rye Bread recipe

Hi everyone,

It's my first time on this side of the forum, but I love good foods too

and even more good receipes :P

My wife loves to make good bread and not to long ago I found where I can get

some good PASTRAMI here in France, but , I need some Rye bread

to go with my Pastrami SO, my question is, does anyone have a recipe on how to

make a home made Deli style Rye bread ??

If there's a baker out there or if you know one, can you please help me out ??

I would think that the most important thing would be the flour and the type of flour

used, like, is it a 815 or a 960 ? etc .etc . :)

Thank you all for helping out a poor soul who's hungry for a great Pastrami sandwich :(

May the Pastrami Gods be with you

I too share your enthusiasm for a great Pastrami sandwich! I've never mastered the art of baking a great rye bread, as we have an excellent deli minutes from home that bakes fresh bread. I will ask them their secrets and forward what I learn. Good luck!

Laf, I thought Pastrami was illegal in your neck of the woods.. ;-)

So you were persistent enough to find pastrami but now you cant find any good rye bread in the south of france? :D:lol3:

Well Jim, that's not exactly it :cigar:

I can find Rye bread here in France and I must say that it's really very good, BUT,

It does not have the same, well, how can I put it , that Americanized taste that you get

in a Deli in the states. ;)

Just like the Pastrami itself, the Pastrami you know in the states, It's not what many would call

Pastrami in the european jewish community. What they call Pastrami is more like a big sausage

then a piece of meat that you know in the US. From the culinary tradition that they brought to

America, with time and some innovation, they transformed Pastrami into what we call

American Pastrami. The same goes for Rye bread, It's different,.

Far from me to say if one is better then the other but it's exactly that difference that I'm

looking for . What I'm trying to do really, is to have a N.Y. Deli style Pastrami sandwich

here in the South of France and I think that I'll get there soon

You're dilemma can be solved. I'll send you a pastrami sandwich from Katz's deli, the best pastrami on the planet.

Just watch your back, make sure no-one finds out about this. You could be a marked man for this kind of blasphemy ... ;)

Reminds me of the movie Pink Panther with Steve Martin, where he falls in love with "Amburgers" and tries to smuggle them back into France. There is a national scandal when he is caught with them in customs.
